Are there any cryptocurrency based startups the average joe can invest that you know of? I've seen a few but they're applying for incubators. Doesa anyone know of any interesting projects one could easily invest if he wanted to?

You generally cannot invest in startups in the US unless you are an accredited investor or close friends and family.
