I don't know about the GUI, but with the command line version you can use the --log-commands argument to output all console i/o to a console.log file.

Is there a way to get the output of the BitSharesX console directly to a txt file?
Or do you have a smarter/easier solution to get the output of console commands in to a file?

using Windows Client.
There is a file called config.json next to your wallet folder and the chain data (somewhere in %APPDATA%) ... that file contains loggin information, logging and loggers ... maybe you can use that ... no sure though
