Any idea when the latest release will be built for OSX, and posted to GitHub?

I think light wallet for OSX will be posted next week, but you can build it by yourself, step by step instruction you can find here: https://github.com/bitshares/bitshares-2-ui

Note: To build BitShares UI instead graphene-ui use bitshares-2-ui repo.
