Hi I'd like to know what are the minimum requirements for running a witness node.

There is no official recommendation. ATM you should be OK with 4G RAM and a reasonable CPU, but you should be prepared to scale up when the TX volume picks up.

4G RAM is not enough now.

Is it possible to have a network with only 1 witness node?
