The stock safari browser on iOS is not compatible with the webwallet so far. However, the "Chrome" browser works, but you need to use the openledger wallet at the moment as the bitshares.org/wallet wallet is offline. Note that there's no mobile optimized view yet.
Please consider voting for my witness mindphlux.witness and my committee user mindphlux. I will not vote for changes that affect witness pay.

what is the difference between http://bitshares.openledger.info  and  the link for the web wallet on the Bitshares site.  https://bitshares.org/wallet/#/   ?

No, difference, it's a links for BitShares hosted wallets, both of them you can find in release notes: https://github.com/bitshares/bitshares-2/releases
They have different "branding" and I am am not sure you the bitshares.org wallet has a deposit/withdraw feature

I shouldn't have to go to the help icon on the open ledger page to find out that the open ledger page has something to do with Bitshares.

Why does the openledger page not mention anything about setting up a wallet for Bitshares 2.0 ?

All it says on the page is to "open an account."

Open an account for what?

When there is lack of explicit information (Bitshares.openledger.info), people can be distrustful of the page they are on.

There isn't even a Bitshares logo on the openledger site.

I know I am being critical here.
But this stuff matters, to gain adoption.

Looks like the Online Wallet does not work with iOS browsers (I tried four - including Safari and Chrome).

:(

I'm currently running iOS 7.

Try https://bitshares.openledger.info
