I'm just guessing but I imagine the recent crypto bull-market has resulted in a huge increase of bitcoin transactions.

Bitcoin can only handle 7 transactions per second...
With a withdrawal from an exchange, it is likely that they paid the minimum fee for the tx to be included in the bitcoin blockchain.
If you could manually tell them to pay a higher fee, your tx could have jumped to the head of the queue.

TL;DR: BTS > BTC

There is around 218,000 unconfirmed transactions on bitcoin, that's a long wait: https://blockchain.info/unconfirmed-transactions
You can double check the reciving BTC address and see if there is an unconfirmed transaction. If there is, you are in line... a very long line...

I am trying to sell some bitshares but having some problems.

my open.btc withdrawal of 5 btc doesn't seem to have gone through.

There is great liquidity on poloniex but my bitcoin withdrawal is awaiting approval.

My first deposit to bittrex was instant, but now I have been waiting for hours for my second deposit to show up.

Any advice for any of these three issues?  Any chance I will sleep tonight?
