The client constructs a local database which contains all votes EVER made on the blockchain by transactions. Thus that database has positive votes from new stake voting FOR you and negative votes from stake being removed from your votes ..
the total is just the sum of all votes (+ and -) for a particular delegate

Thanks :) Do the vote totals have a range applied to them, or are they truly over all time?
all time

go here: https://bitsharesblocks.com/delegate/votes?name=delegate.xeroc
and press the ">" sign right of "VOTES HISTORY (X TOTAL VOTES)"

Votes for delegates are built into transactions - the stake transferred becomes the vote, but how do you arrive at the totals?
