how do we know when we hit a block ?

The output in the miner displays the balance in the wallet (both mature and immature).    It also displays total shares mined by all users, you cut is the the fraction of shares you found.

I estimate your cut continuously.

Pool speed in shares per minute is also displayed in every miner.
